Director wanted a black & white look for this short film, so i recommended shooting in color, then using the extra information to create a more pretty black & white.
DSLRs like the Canon 5D mk ii have a chroma sub-sampling of 4:2:0 so luma isn't compressed, that gives a lot of flexibility to the image.
Final Look a pretty Black & white with a nice gray scale.
